The Elder (Sambucus nigra) is a beautiful shrub or small tree, which arises spontaneously at the edge of the wood, and gives us its beautiful flowers between April and May: simple white inflorescences with a magnificent scent. I couldn’t resist: I had to use it in my kitchen, so I decided to prepare the Homemade Elderflower syrup.
I assure you that it is a magic syrup: for its unmistakable flavor, for its perfume, for its multiple healing and therapeutic properties and because, let’s face it, all of us Harry Potter fans know how powerful the magic of the Elder wand is.
Time: 1.5 hours preparation 2 days rest
Servings: 1,5 liters
20 elderberry inflorescences well open
6 untreated lemons (peel should also be used)
1,5 lt of natural water
½ glass of apple cider vinegar
1,5 kg of sugar
Glass jars for the preparation (I used two hermetic glass jars of 0.75 lt.)
Glass bottles for storage
Clean and unscented tea towel to filter
How to get up
First of all sterilize the containers in which you are going to leave the flowers to infuse.
Collect Elder flowers just before preparation, so that they are fresh, remove wood and twigs, trying to use only the flowers, wash them, remove dust, impurities and insects.
Wash the lemons well and cut them into slices.
In the jars, place the flowers and lemons in layers, until you reach the top and pour the water to cover. Close and leave in a cool place for at least 48 hours.
After two days, after having sterilized the bottles, with the cloth and wearing latex gloves, filter the flavored water in a pot, squeezing flowers and lemons well, so as not to lose their aroma and flavor.
Put on the fire, add half a glass of apple cider vinegar and 1.5 kg of sugar. Let it boil, keep blending, and melting the sugar.
Boil for 10 minutes, and then let it cool.
Now, with the help of the funnel, you can fill the bottles with your Homemade Elderflower syrup, which you can keep in the fridge for a couple of months.
